PENNETTE CAPRICCIOSE
Ingredients: 4 Servings: 1 lb. pennette pasta; 10 oz. mazzancolle (large shrimp); 7 oz. smoked salmon; 1/4 cup brandy; 5 oz. tomatoes; 1/2 cup cream; 7 oz. of grated Parmigiano cheese, 1 tablespoon of butter, garlic, hot pepper.
Saute‚ mazzancolle and salmon. in the butter for a couple of minutes, add brandy, garlic, tomatoes, cook for about 10 minutes, addthe cream and cook for anothewr 5 minutes. Separately, boil the pasta in slightly salted water until al dente. Drain. Add the pasta together with Parmigiano cheese and the tomato and fish sauce, mixing well. Serve hot
