Salame with fennel seeds

FINOCCHIONA

A very delicious specialty made with pork or with beef. As its name reveals, it is seasoned with funnel seeds (or "finocchio" in Italian). Finocchiona requires three months of aging and has a tasty and sometimes spicy.

Other information : Made with pork and finely ground, it is seasoned with salt, pepper, garlic and, as indicated by its name, with semi di finocchio, (fennel seeds), dry-aged for about 3 months. It is rather thick in diameter and it is 8-10" long. Finocchiona is knotted lengthwise with intermediate loops across. It should be sliced fairly thick for consumption.
