The Cacciatore (or "hunter") is a small-sized salami made with half pork and half beef. Some producers make it with pure pork. Seasoned with black pepper, spices, garlic and dry white wine, it is hung over slow-burning charcoal until it dries, then it is aged for one month. |

Other information : This is a rather small salame usually made with half pork and half beef, with the addition of fresie pancetta, black pepper, garlic and optional spices. Cacciatore is approximately 5-7" long and weighs about 6-8 ounces. It is knotted at each end (just like a regular sausage). The aging has to be for at least 30 days. This salame is also called cacciatorino. |
